Herdy's Coffee Kisses
Herdy’s Coffee Kisses are the perfect little pick-me-up for coffee lovers with a sweet tooth. Crisp on the outside, soft in the middle, and sandwiched together with silky coffee buttercream and a cheeky chocolatey surprise!
Pop the kettle on, grab your favourite Herdy mug, and get ready to bake a batch of these delightfully dunkable treats.
Ingredients
For the Biscuits
- 1 heaped tbsp instant coffee, dissolved in 1 tsp boiling water
- 165g self-raising flour
- 85g caster sugar
- 85g unsalted butter
- 1 medium egg
For the Buttercream
- 1 heaped tbsp instant coffee, dissolved in 1 tsp boiling water
- 100g unsalted butter
- 200g icing sugar
Method
Brew up the biscuit dough
Dissolve the instant coffee in the boiling water, give it a good stir, and leave to cool.
In a large mixing bowl, stir together the flour and caster sugar. Add the butter and rub it in with your fingertips until the mixture looks like fine breadcrumbs.
Crack the egg into the cooled coffee and whisk with a fork. Pour into the dry ingredients and mix until you have a soft, slightly sticky dough.
Give the dough a quick knead for around 30 seconds so everything comes together nicely. Cover and chill in the fridge for 1 hour.
Roll, cut & chill
Lightly flour your work surface and roll out the dough to around 5mm thick. Use your Herdy cookie cutter to stamp out your biscuit shapes.
Place the biscuits onto a lined or non-stick baking tray, then pop them back into the fridge for another 15 minutes. This extra chill helps them hold their shape while baking.
Meanwhile, preheat your oven to 180°C (160°C fan), Gas Mark 4.
Bake to biscuit perfection
Bake the biscuits for approximately 15 minutes, until the tops look dry and lightly golden.
Leave them on the tray for a few minutes before carefully transferring to a wire rack to cool completely. Don’t be tempted to over bake — they’ll firm up naturally as they cool.
Whip up the buttercream
While the biscuits cool, make the filling.
Dissolve the coffee in the boiling water and leave to cool slightly. Beat together the butter and icing sugar until smooth, then add the coffee and continue whisking until light and fluffy.

Build your Coffee Kisses
Spread a thin layer of buttercream onto half your biscuits. Spoon the remaining buttercream into a piping bag and pipe a ring around the edge of the biscuit.
Sprinkle a few milk chocolate chips into the middle for that delicious hidden surprise, then gently sandwich another biscuit on top.
For the neatest finish, chill the finished biscuits in the fridge for a little while to help the buttercream hold its shape.
